Zoodles Spaghetti with green goddess pesto

This is one of my favourite kitchen staples – I love it so much with spiralized zucchini which is a light and refreshing alternative to pasta. Sometimes I swap out the basil for 1/2 bunch of coriander which also tastes amazing! Let me know what your favourite way to eat it is…

Ingredients
  • 2 Zucchini spiralized
  • Green Goddess Pesto
  • 1 bunch basil
  • 1 bunch parsley
  • ¼ cup pine nuts
  • 1 peeled cored avocado
  • juice of 1 lemon
  • 1 clove garlic
  • ½ tsp Himalayan salt
  • ¼ cup extra virgin olive oil
  • ¼ cup water (add more if required)
  • 2 tbs nutritional yeast
  • ½ tsp chili flakes (optional)
  • 4 sun-dried tomatoes
  • 10 walnuts
  • small handful of sprouts
  • High speed blender
Instructions
  1. For the goddess dressing add all the ingredients to a high speed blender and whizz until a smooth consistency is required, if the dressing is too thick add a little more water or oil. Add more chilli or salt to meet personal taste.

    Pour dressing over the zucchini spirals and top with sun-dried tomatoes, walnuts and sprouts.

Naomi's Tips

The nutritional yeast makes this pesto a vegan pesto but you can replace with grated Parmigianino.
