Energy Pancakes

A delicious and nutritious way to energise your body for a super start to your day with my Energy Pancake recipe.  I add my I AM Energised blend for an extra boost.

  • 2 eggs
  • 2 ripe bananas
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla powder
  • 1/2 cup oats
  • 1 tbs of I AM Energised blend
  • 1 tbs coconut oil – to cook
  • 1 tsp Super me mix and 1 tbs per serving of almond butter to garnish


  1. Add all the ingredients to a bowl apart from the coconut oil

  2. Use a stick blender or blender or a blender/nutri-bullet to combine everything until and thick creamy batter forms

  3. Heat a large non-stick heavy pan on a high heat and add 1 tsp of coconut oil to grease the pan

  4. When the oil has melted use a tablespoon to add the batter carefully onto the hot pan to form the pancake shapes – depending on the size of your pan you might be able to fit 3 or 4 pancakes in one pan or you can use a moulded pancake pan for ease and perfect pancakes!

  5. Cook for a few minutes until the pancakes start to bubble, with a spatular carefully flip them over and cook for a further few minutes on the other side until cooked – remove from the heat and set aside

  6. Repeat process until all the pancake mixture has been used and you have a pile of gorgeously delicious pancakes.Serve with berries and maple syrup if needed

Naomi's Tips

Add 1/2 cup of blueberries (after blending) for an extra juicy twist!
