Simple Celeriac

  • 1 Celeriac peeled and chopped into 1 cm cubes
  • 1 tbsp Extra Virgin Olive Oil
  • 2 Cloves of garlic Crushed
  • 1/4 tsp Himalayan or sea salt
  • 2 handfuls Organic Spinach
  1. Heat a heavy bottom pan (that has a lid) to a medium heat and add the olive oil, once heated add the garlic 

  2. Cook the garlic for 2 minutes or until lightly browned and add the celeriac and salt, stir well and pop the lid on and leave to cook for 15 minutes (the steam will cook them nicely)

  3. Add the spinach and pop the lid back on for a further 5 minutes 

  4. Check the celeriac is cooked through and tender and serve immediately as a side dish to a lean protein or as part of a roast dinner as an alternative to roast potatoes.

Naomi's Tips

Celeriac is a rough root veg that has a tough exterior so you will need to peel away all the cracks to get to the delicious core (approx 1/2 cm)
