Peanut Butter and Jam Flapjacks

Delicious and easy to make flapjacks to satisfy sweet cravings

Ingredients
  • 2 ripe bananas mashed
  • 1 cup crunchy peanut butter
  • 1 cup strawberry jam
  • 3 cups rolled oats
  • 1/2 cup coconut sugar
  • 1/4 cup oat milk
  • 1/2 tsp vanilla powder or essence
  • pinch of Himalayan salt
Instructions
  1. Pre-heat the oven 180C and line a square 20cm square baking tin with parchment paper

  2. Mash the banana and add in the peanut butter, oat milk, strawberry jam, vanilla, salt and coconut sugar. Stir well

  3. Add in the oats and mix well

  4. Transfer the mixture into your baking tin and push down evenly into the corners using the back of a spoon to compress

  5. Pop into the oven for 25-30 minutes or until golden brown

  6. Leave to cool before cutting

  7. Enjoy with a lovely cuppa and a big smile!
