A delicious recipe that makes the perfect breakfast bread to enjoy topped with almond butter and cinnamon.
- 4 ripe bananas peeled
- 4 pitted medjool dates
- 1/4 cup almond butter
- 1 cup rice flour
- pinch of Himalayan salt
- 1 tsp baking soda
- 1 tsp vanilla powder
- 2 eggs beaten
- 1/4 cup chopped roasted hazelnuts
- 1 ripe pear chopped into quarters
Preheat the oven to 180C or equivalent heat
Add all the ingredients apart from the pear and hazelnuts to a high speed blender or food processor and blend until a smooth batter forms
Stir through the chopped hazelnuts
Pour into bread tin / mould
Arrange the pears skin side down on top of the bread batter
Pop into the oven for 35-40 minutes or until golden
Remove from the oven and allow to cool before removing from the bread tin or cutting
Enjoy a slice with some almond butter and cinnamon on top with a nice cup of tea!
