Banana, Pear and Hazelnut Bread

A yummy lockdown recipe to enjoy with your family.  Simple ingredients but please message me here for any substitute ideas.

Banana, Pear and Hazelnut Bread

A delicious recipe that makes the perfect breakfast bread to enjoy topped with almond butter and cinnamon.

Course: Breakfast, Dessert, Snack, vegan
  • 4 ripe bananas peeled
  • 4 pitted medjool dates
  • 1/4 cup almond butter
  • 1 cup rice flour
  • pinch of Himalayan salt
  • 1 tsp baking soda
  • 1 tsp vanilla powder
  • 2 eggs beaten
  • 1/4 cup chopped roasted hazelnuts
  • 1 ripe pear chopped into quarters
  1. Preheat the oven to 180C or equivalent heat

  2. Add all the ingredients apart from the pear and hazelnuts to a high speed blender or food processor and blend until a smooth batter forms

  3. Stir through the chopped hazelnuts

  4. Pour into bread tin / mould

  5. Arrange the pears skin side down on top of the bread batter

  6. Pop into the oven for 35-40 minutes or until golden

  7. Remove from the oven and allow to cool before removing from the bread tin or cutting

Naomi's Tips

Enjoy a slice with some almond butter and cinnamon on top with a nice cup of tea!
