This is a genius recipe as it is super simple but can be enjoyed 2 ways; either rolled into protein balls or baked into coconut macaroon cookies. How would you eat yours?
- 1 cup 90g desiccated coconut
- Zest of 1 lemon
- 1/2 cup raw walnuts
- 2 tbsp melted coconut oil
- 2 tbsp agave or maple syrup or honey
- 3 tbsp lemon juice
- 1 teaspoon vanilla powder
- pinch of salt
- 2 teaspoons camu camu powder optional
Put all the ingredients into a high speed blender and whizz on high speed until all the ingredients have broken down into a fully combined mixture
Cookies - Preheat the oven to 180C
Line a baking sheet with some parchment paper or grease with a little coconut oil
Roll into bit size balls then press with a fork to flatten to a cookie
Pop into the oven for 10 minutes or until golden
Remove from the oven and leave for 10 minutes to cool.
Protein Bites - Roll the mixture into bite size balls.
You can also sprinkle some extra desiccated coconut on a plate and roll the balls to coat.
Pop into the fridge to set for 20 minutes.
Store protein bites or cookies in a sealed container in the fridge, will last up to 5 days (if you don’t eat them all before)
